Pumpkin lattes, pumpkin muffins, pumpkin pie …. so many delicious pumpkin treats to be found this time of year! If you’re like me, I love adding a bit of this seasonal goodness into my fall cooking and baking. I made a batch of this gluten free pumpkin spice granola as a gift, and I could barely keep my kids from eating it all before I packaged it up in a big mason jar. While I used a variety of gluten free grains, seeds, and nuts that I had on hand, you could easily adjust the grains to ones you tolerate well, or leave them out completely, subbing in more nuts and seeds to make it completely grain-free. This will leave your kitchen smelling like a bakery in the fall, and it makes a great gift.
Here’s what I used this time:
- 4 c. gluten free oats
- 2 c. organic pumpkin puree
- 1 c. chopped pecans
- 1 c. unsweetened coconut flakes
- 1 c. pumpkin seeds
- 1 c. sunflower seeds
- 1 c. chia/quinoa Super Oats blend by LoveGrown Foods
- 1 c. maple syrup
- 1/2 c. coconut oil melted
- 3 tsp. cinnamon
- 2 tsp. pumpkin pie spice
- 1 tsp. allspice
Combine all ingredients in a large bowl, mix well, and spread out on two baking sheets covered with parchment paper. Bake in a 250 degree oven for 1-1 1/2 hours or til desired, tossing occasionally.
